I'm guessing I can determine if someone is using a treadmill or even a bench press by detecting vibration. Would it be feasible to sense this for a costs below $5 per piece of equipment being monitored?

$5 total cost per unit? I’m nearly certain this is not possible, just the LoRa radio is more expensive than that. And you still have to add sensor, microcontroller, battery, antenna, case... I think you may find sensors built in large volumes using others technologies such as ZigBee or maybe BLE for around $10-$15, but you’ll need to add the network side of it. Also you probably need to carefully define what counts as a vibration to avoid false negatives and positives, off the shelf sensors may not be suitable. – jcaron Apr 28 at 12:54
